Since 2000 winemaker Brian Franklin has visited France annually to study their style and reflects this in his wines.

Oyster & Mussel farming:

The Oyster Farm tour experience is at our farm base, situated at the end of Flacks Road, Coles Bay.

Accompanied by one of our farmers, guests will put on waders & walk into Moulting Lagoon/ Swan River. This is an estuarine area, where we farm intertidal oysters. Learn about how oysters grow, the life cycle & how we farm them in this unique environment. They will then harvest some oysters to take back ashore to open & enjoy with sparkling wine & delightful accompanying dressings.

Experience harvesting & opening oysters at the source with a buffet BBQ Lunch, cooked on site by our chef.
Menu:  Fresh harvested oysters, natural & dressed, Bicheno farmed abalone, FMF smoked Atlantic Salmon, Coles Bay Sea Urchin, FMF Mussels (3 ways), Southern Rock Lobster, grilled fresh (season availability applies). BBQ’d wild caught white fish, fresh salads from local growers, with local wines & beers.
